THE MOUNTAIN WINE
In the past, when South Tyrol was still a land of red wines, the hilly area around the Plötznerhof above Boymont Castle offered a chance to the grape of the Pinot Bianco. The meeting of the bleak limestone soil with the heat-retaining, quartz-rich porphyry rock and the cool mountain winds mean that this small, largely dry patch of earth offers ideal conditions for a Pinot Bianco with considerable depth of soul – then as now.
